Off To School We Go --Pack Easy Lunches with Pearls Olives To Go #BetterWithPearls Mini Moments

The boys are heading back to school bright and early tomorrow and it's time to start packing lunches again. I went shopping today and when I'm looking for lunch items of course healthy is #1, but there are some other things that I look for. A big factor is what is going to be easy --easy for them to open, easy for me to grab in the morning to put in their lunchbox and another one is the perfect sized portions. Kids waste so much food, so having the right size portions is very important and something I look at as I'm browsing the isles at the store.

We love simple things like cheese sticks, yogurt, pretzels, fruit cups, individually packaged cookies so they don't eat too many etc... Jace is so picky, but Grady loves variety. One thing he gets from me is his love for olives. He loves them plain, on pizza and now he loves packing them in his lunch box thanks to, Pearls Olives To Go!

Pearls Olives To Go come in a variety of styles --Black Pitted, Pimiento Stuffed, Pitted Kalamata and Sliced. They are a fun convenient way to enjoy olives in your lunch and I love that they offer an E-Z open package, aren't packaged with liquid so kids don't have to worry about spilling the juice all over them and the package is the perfect size. I also love grabbing these as a snack or packing in my own lunch when I'm on the go!

As I get ready to go to bed tonight I can sleep better knowing I have everything organized and ready to go for their BIG day tomorrow! Clothes are laid out, book bags are packed, breakfast has been decided and I have everything I need to finish packing their lunches, including Pearls Olives To Go!

 You can usually find these with the canned or jar olives. I found mine at Wal-Mart and that's exactly where they were!

Wake up to eggs this school year with Mini Breakfast Pizzas from the Ohio Poultry Association....

It's that time again --kids and teachers are heading back-to-school. One of the most important things to start the day and school year just right is a healthy, protein packed breakfast. Studies have shown that kids who eat breakfast have better concentration during the school day hours than kids who skip the morning meal. They are also less prone to obesity and illness, leading to fewer sick days.

Today I'm excited to share some fun tips, facts and a delicious recipe from the Ohio Poultry Association to help you and your family 'Wake Up to Eggs this school year!

Wake Up to Eggs: 

* On busy school days, wake up to eggs! Eating a protein-rich breakfast keeps kids stay full for hours. One egg contains 6 grams of high-quality protein! 
* Not only do eggs leave kids feeling fuller longer, but eggs also contain 13 essential nutrients and 6 grams of high-quality protein, all for only 70 calories. 

* A healthy breakfast fuels the brain. Research shows that kids who eat breakfast have higher test scores, improved attendance and better class participation. 

* Scrambled, fried or hard-boiled — there’s usually at least one option for cooking eggs that even the pickiest kids like! Nutrient-dense breakfasts including eggs have been shown to help children focus and perform better in school.

* Unlike most cereals and yogurt, eggs only contain one ingredient – “eggs.” They don’t contain sugar or carbs, either. And, at just 17¢ a serving, they’re the least expensive source of high-quality protein. In fact, the protein in eggs is the highest-quality protein found in any food. 

* Prep for the week by making a batch of hard-boiled eggs to pack in lunches and use in recipes such as easy egg salad. Watch this easy-to-follow video to find out how to make the perfect hard-boiled eggs! 


  I'm from Ohio, the 2nd largest egg farming state in the nation producing more than 9 billion eggs each year -- can you imagine, 9 BILLION --WOW!

So what will you be making for breakfast this school year? My kids love pizza and it's usually a no-no for breakfast, but why not let them have it with these Mini Breakfast Pizzas I'm about to share...


4 eggs, beaten * 1/3 cup pizza sauce * 2 English muffins (split and toasted) * 1/2 cup shredded Italian cheese blend (2 oz.) * Dried oregan leaves


1. Heat oven to 450°F. Coat large nonstick skillet with cooking spray; heat over medium heat until hot. 

2. Pour in eggs. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking -- pulling, lifting and folding eggs – until thickened and no visible liquid egg remains. Do not stir constantly. Remove from heat. 

3. Spread pizza sauce evenly on muffin halves; place on baking sheet. Top with eggs and cheese, dividing evenly.

4. Bake in 450°F oven until cheese is melted, about 5 minutes. Sprinkle with oregano.

Notes:  Pizzas can be baked in toaster oven at 450°F until cheese is melted, 1 to 2 minutes.
